Ingredients:

3 avocado’s
3 normal to big size cloves of garlic
Half a regular sized onion or a whole shallot
The juice of half a lime
4 tablespoons vinegar or balsamic
4 tablespoons extra virgin olive oil
Italian Herbs! preferably fresh..
2 Tablespoons of mayonaise
Salt (preferably grey seasalt or vulcanic salt.. mineral party!!) & pepper according to taste

Start with cutting the garlic and the onion as small as possible and let this soke for a while in the oil. (molecular gastronomy blabla)
After this add the spices.. in the case of fresh spics.. cut em as small as possible.

After this add the rest of the ingredients and make a smooth mush out of all of it 🙂

Let the core of the Avocado sit in the Guacamole, this prevents the avocado from oxidizing (turning brown ;-P )
